More Bourgogne Blanc should be made like this. Has the richness and creaminess one would expect from higher priced white Burgundies, but also good fresh acidity to keep it all in check. The fruit flavors are text book Chardonnay: apple, pear, fig, cinnamon, a hint of smoke and plenty of minerality. Great length too.
