Savian Wines is a certified organic winery located in Venezia, Veneto in northern Italy where early in the last century, where the estate now stands, the land was a never ending expanse of oak woods.. The grapes are grown organically in the Sylvoz method, made famous by a local Italian winemaker Carlo Sylvoz where canes of up to, say, ten buds in length are tied to a wire below a high cordon of about 1m leaving the buds quite high off the ground dangling downward.
Our wine of the week is their Cabernet Franc, a medium-bodied red to pair with a grilled venison or beef stew or by itself. It strikes the eye for its intense ruby red color with a tint of purple, the nose has a certain herbaceousness with hints of wild flower. The palate offers intense red spectrum fruits, nicely ripe and balanced with blackberry, thyme and a touch of dill finishing with a spicy lick. Not often do you find a CabFranc from Italy, this certified sustainable and Vegan friendly red is both elegant and harmonious at a low 12.5% ABV.
